Pumpkin Scones



Another recipe for my second fall favourite flavour! Pumpkin scones! I love scones however they come, but these just be my new favourite. Cinnamon, nutmeg, cloves, ginger! I mean, come on; these scones are jam packed with flavour! And the best part is that they are not complex to make, but they look so fancy once they're glazed. Your friends will think they're from a bakery! A pastry blender was pretty key in this recipe as it helped cut the butter in just enough to create a flaky texture to the scone; if you don't have one you can use a fork or even your fingers. Now, go gather your ingredients, put a pot of coffee on, and get baking! And be prepared to have this recipe handy... These scones won't last long!




Pumpkin Scones


Ingredients:


For the scones:

2 cups flour

1/2 cup brown sugar, packed

1 tsp cinnamon

1 tsp baking powder

1 tsp ground cloves

1/2 tsp ground ginger

1/2 tsp ground nutmeg

1/2 tsp baking soda

1/2 tsp salt

1/2 cup butter, cut into cubes

1/2 cup pumpkin puree

2 Tbsp milk

2 large eggs

1 1/2 tsp vanilla extract


For the glaze:

1 cup icing sugar

2 Tbsp milk


Instructions

  1. In a large mixing bowl, combine flour, sugar, cinnamon, baking powder, cloves, ginger, nutmeg, baking soda, and salt.

  2. Add cold butter. Use a pastry blender to work the butter into the dry ingredients until it resembles coarse crumbs.

  3. In a small mixing bowl, whisk together pumpkin puree, milk, eggs, and vanilla. Pour mixture over dry ingredients and stir using a rubber spatula until a soft dough forms.

  4. Working on a lightly floured surface, knead the dough 3-4 times until it comes together. Using a rolling pin, roll the dough into a rectangle, about 1 inch thick. Using a large knife or a pizza cutter, cut the rectangle into equal triangle pieces.

  5. Place scones onto baking sheet. Place into oven and bake at 400 for 10-12 minutes, or until a toothpick inserted in the centre comes out clean.

  6. To make the glaze, combine icing sugar and milk. Whisk until smooth. If the glaze is too thick, add more milk as needed; set aside.

  7. When the scones are done, cool for 10 minutes and drizzle the glaze on each scone.

  8. Allow glaze to set before serving.
