New Friendship Bread Loaves



Looking to try something new with your Amish Friendship Bread starter? I have TWO new loaf flavours that are so worth trying AND they would convert to muffins no problem!


I love a good lemon poppyseed loaf. The fresh tang of lemon combined with the subtle crunch of the poppyseed... MM MM MM! If you're looking for an extra buzz of lemon, try zesting a lemon and adding that into the batter. It will not disappoint!


Here's the recipe:




Lemon Poppyseed Amish Friendship Bread


INGREDIENTS


2 cups all-purpose flour

1 cup white sugar

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

⅛ cup poppy seeds

1 small package of instant lemon pudding mix

1 cup Amish Friendship Bread Starter

2 eggs

½ cup milk

½ cup applesauce

2 teaspoons vanilla extract

½ cup vegetable oil


INSTRUCTIONS

  1. In a large mixing bowl blend together the flour, sugar, baking powder, baking soda, salt, cinnamon, poppy seeds, and lemon pudding mix. Make a well in the center of the bowl.

  2. In a separate bowl, mix together the Amish starter, eggs, milk, applesauce, vanilla, and vegetable oil. Add to dry ingredients and blend until just combined. Pour batter into 2 greased loaf pans.

  3. Bake in a preheated 325 degree F oven for one hour. Cool for 10 minutes on a wire rack. Remove bread from pan.




This next recipe sounded too good to be true... Peach and Pecan Loaf. My mouth is watering just thinking about this. Subtle sweetness from the peaches with the toasted crunch of the pecans. I added a cinnamon sugar sprinkle on top for the finishing touch on these loaves.

Peach Pecan Amish Friendship Bread


INGREDIENTS


1 cup of starter

3 eggs, at room temperature

1/2 cup vegetable oil

1/2 cup of unsweetened applesauce

1/2 cup milk

1/2 teaspoon vanilla extract

1 cup sugar

2 teaspoons cinnamon

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon kosher salt

2 cups all-purpose flour

1 cup of toasted and chopped pecans

1 398 ml can of sliced peaches in light syrup, thoroughly drained and diced


INSTRUCTIONS

  1. Preheat the oven to 325F.

  2. Grease 2 large loaf pans with cooking spray. Set aside.

  3. In a large bowl, mix together the eggs, oil, applesauce, milk, and vanilla until well combined and add it to the starter. Mix until all the ingredients are well incorporated.

  4. In a separate bowl, whisk together the sugar, cinnamon, baking powder, baking soda, kosher salt, and flour. Add it to the starter batter and continue to mix until dry ingredients are moistened.

  5. Fold in peaches and pecans.

  6. Pour the batter evenly into the 2 pans and sprinkle with a mixture of cinnamon and sugar.

  7. Bake for 60 minutes. Remove from the oven and test with a toothpick for doneness. Let the loaves cool for ten minutes in the pan before transferring to a wire rack to finish cooling.
