My son loves blueberries. He could eat them every day, morning, noon, and night. In fact, he loves blueberries so much that I made him his own personal blueberry pie for his first birthday. The look of delight on his face when he took his first tentative bite and realized that he had a pile of blueberries sitting in front of him was just hilarious to watch.
That beautiful pie with careful lattice work pastry on top was very quickly devoured, smeared, pasted, (you name i!t) all over him, the walls, the table, and the floor. I'm amazed that boy's skin didn't stay stained purple after all the blueberries he ate!
My love of all things Friendship Bread continue in this post! Have I convinced you yet that you REALLY want to try a starter and make some of these recipes? I'm just loving how versatile this starter is (see my next post about making BUNS if you need extra convincing!). Let me introduce you to blueberry walnut loaf with a lemon glaze... Start preheating your oven now and get out those mixing bowls and wooden spoons.
Blueberry Walnut Friendship Bread with Lemon Glaze:
Ingredients:
1 cup Amish Friendship Bread starter
3 eggs
1 cup oil
½ cup milk
1 cup sugar
½ teaspoon vanilla extract
1½ teaspoons baking powder
½ teaspoon salt
½ teaspoon baking soda
2 cups flour
1 small box vanilla instant pudding (or lemon instant pudding if you're a real lemon lover!)
1 cup fresh blueberries rinsed and drained
1 cup chopped walnuts
Instructions:
Preheat oven to 325° F (165° C).
In a large mixing bowl, add ingredients as listed.
Grease two large loaf pans.
Pour the batter evenly into loaf or cake pans.
Bake for one hour or until the bread loosens evenly from the sides and a toothpick inserted in the center of the bread comes out clean. Allow to cool before drizzling with lemon glaze.
For the lemon glaze, mix icing sugar and lemon juice together until you get the desired consistency to drizzle on top.
