Friday Night Pizza Night!



I grew up in a family that had the pleasure of enjoying homemade pizza regularly. I can remember many times spent as a family, eating our pizza that was baked on a 9x13 baking pan, watching a movie, together, in our family room. My mum still continues to make her famous "mile high BBQ chicken pizza pie" on Friday nights and now I get to begin my own Friday Night Pizza Night tradition with my family.




Here is my mum's famous BBQ Chicken Pizza recipe:


Ingredients for Topping:

· 3 chicken breasts

· ½ pound bacon cooked

· ½ red onion

· ½ red pepper finely chopped

· BBQ sauce as much as you like

· Tex Mex cheese


Instructions for Topping:

1. Cook chicken, red onion and add red pepper at last one minute of cooking.

2. Add BBQ sauce. We tend to like Bull’s Eye. Add as much as you like!

3. Place topping on prepared pizza dough.

4. Cook 400F for 12-15 minutes or until done, brown on top and bottom

5. Enjoy with a glass of red wine.


Pizza Dough


Ingredients

· 2 cups flour

· 1 TBSP fast acting yeast

· 1 TBSP sugar

· 1 cup warm water


Instructions:

*While prepping the dough, preheat the oven to 400F and heat your pizza stones up!


1. In your Kitchen Aid Mixer, mix all ingredients together! Let stand for 15 minutes.

2. Cut out parchment to the shape of your 2


pizza pans and cover with olive oil. Sparingly!

3. Spread dough on each parchment paper.

4. Let rise for 15 minutes or so…or as long as it takes to have a few sips of wine!

5. Place toppings of choice on pizza

6. Cook for 15 or so minutes in 400F oven. Make sure bottom is brown. Broil top if necessary.

7. Enjoy with a glass of red wine. Or was that mentioned already! You know it is Friday night!
