Applesauce Muffins

Oh man! It's been awhile! I hope you've all had a great summer, despite any changes to travel plans due to COVID-19. We spent time in Osoyoos with family, went on a camping trip, and got a puppy! Busy, full, memorable summer. Now, it's nice to settle back into the routine that fall brings with a new school year and with the season of fall come all of my favourite flavours. Be prepared to receive lots of notifications in the next few weeks as I post all of my favourite fall recipes!


First fall favourite flavour... APPLES!


We have an apple tree in our backyard, so recently my daughter and I picked a bunch of apples and made applesauce in our crockpot. It's so simple: peel, core, and slice ~10 apples. Add 1/2 cup of water. Sprinkle with cinnamon. Cook on high for 4 hours. While these apples cook your house will be transformed with the smells of comfort, warmth, and coziness! Serve warm right from the pot or store in the fridge until ready to serve or bake with.



Today, I did some baking with my homemade applesauce... Give these moist and flavourful muffins a try!



Applesauce Muffins


INGREDIENTS

  • 1 3/4 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2 teaspoons ground cinnamon

  • 1/2 cup brown sugar, packed

  • 1/2 cup granulated sugar

  • 2 eggs

  • 1/2 cup oil

  • 1 teaspoon vanilla extract

  • 1 1/2 cups applesauce


INSTRUCTIONS

  1. Preheat oven to 375 degrees and line standard-size muffin tins with paper liners.  Spray the liners with nonstick spray.

  2. In a large mixing bowl, whisk flour, baking soda, salt, cinnamon, brown sugar, and granulated sugar together.  Set aside.

  3. In another mixing bowl, whisk eggs, oil, vanilla, and applesauce until smooth.

  4. Add the flour mixture to the egg mixture and mix gently until just combined.  Do not overmix.

  5. Scoop the muffin batter into each muffin liner, filling 3/4 (or a bit more) full.

  6. Bake at 375 degrees for 17-20 minutes, or until a toothpick inserted into the center of the muffin comes out clean.  Cool for a few minutes in the muffin tin, and then remove the muffins to cool on a cooling rack.

  7. Once cooled, keep the muffins at room temperature in an airtight container.  These will freeze well for up to three months.
