Amish Friendship Bread Biscotti



Any other biscotti lovers out there? My hubby and I LOVE having a biscotti with our morning coffee, so you can imagine my delight when I found a recipe for Amish Friendship Bread biscotti! There is always a bag of starter either bubbling away on my counter or countless bags in my freezer that making this recipe was a no brainer. These biscotti maintain a nice crunch and have a beautiful flavour that compliments any cup of coffee!












Here's the recipe:


INGREDIENTS 1 cup Amish Friendship Bread starter

⅔ cup granulated sugar

½ cup butter softened

1 teaspoon vanilla

1 egg

3 cups flour

1 teaspoon baking powder

½ teaspoon salt

1 cup almonds

1 cup dried cranberries


INSTRUCTIONS 1. Preheat oven to 350° F (175° C).

2. In medium bowl, cream together starter, sugar and butter. Stir in vanilla extract and egg.

In another bowl combine flour, baking powder and salt. Stir into creamed mixture. Fold in nuts and cranberries.

3. Divide dough into 2 pieces. Place the dough on two parchment lined cookie trays and flatten until about 10 inches long and 3-4 inches wide.

4. Bake for 30-35 minutes, until firm. Cool on baking sheet for 10-15 minutes.

5. Slice logs crosswise into ½ -inch wide slices. Place slices cut side down on baking sheet.

Return to oven for additional 15 minutes, until crisp and light brown. Flip the biscotti over and bake for another 15 minutes.

6. Brew a pot of coffee and get ready to dunk!
